Our Story
Meet Eric
Eric is the chef, creator, recipe developer, ingredient taster, dishwasher, trailer-hitcher, and face behind Wheat + Water Crafted Doughz.
His love for cooking started young — around age 10 — learning by watching, listening, and helping his grandmother in the kitchen. That early exposure sparked a lifelong passion for food and craftsmanship. Eric’s deep appreciation for fresh, homegrown ingredients comes from growing up on his family farm in upstate New York, where quality food wasn’t just important — it was a way of life.
After graduating from culinary school and moving to Boston, Eric honed his skills working on Newbury Street as both a sous chef and executive chef. There, he learned the intricacies of fast-paced city kitchens and casual upscale dining. His journey through the foodservice industry has taken him everywhere — from fine dining and corporate dining to taverns, casual eateries, catering, and quick-serve concepts — all while dreaming, experimenting, tasting, and creating what would eventually become Wheat + Water Crafted Doughz.
For more than two years, Eric tested and refined his doughz — experimenting with different flours, hydration levels, fermentation times, and ovens — in pursuit of the perfect bite. The result is doughz that are light, fluffy, bubbly, soft to bite, with a crisp edge and the perfect chew.
Eric’s dream is simple: to share his flavors with as many people as possible. To him, food is about connection — to your family, your neighbors, your community, and each other. Food brings people together, and Eric’s love and passion shine through in every recipe, every combination, and most definitely, in every doughz he serves.
We’re a local husband-and-wife duo chasing a dream (and slinging doughz). After countless late nights, flour-covered counters, and more taste-testing than we care to admit, we’re proud to share what we’ve built—doughz we truly love and can’t wait to serve. Wheat + Water was born from a love of great food, hard work, and bringing people together, one bite at a time.
At Wheat + Water, it’s all about hand-stretched doughz made with love. We use fresh, high-quality, locally sourced ingredients and a whole lot of passion. From the aroma of a blistered pizza pulled fresh from our dome oven to the first bite of a warm Pock-itz, we’re here to create crave-worthy moments wherever we roll up. Made to satisfy serious cravings, our bold, chef-driven doughz are for families, food lovers, and everyone in between—every pizza hand-stretched, every Pock-itz thoughtfully crafted, and every ingredient chosen with care, freshness, and local pride.

Meet Samantha
Samantha’s culinary journey began much like Eric’s — learning in the kitchen by watching her grandmother bake, cook large family meals, and always send everyone home with something special. Those family recipes became the foundation of her love for food and the flavors that continue to inspire her today.
She graduated from culinary school with degrees in culinary nutrition and business marketing, and spent several years working in higher education, helping students navigate and meet their dietary needs on campus. Samantha later transitioned into the quick-serve food world, where she spent over a decade discovering a true passion for serving people, building connections, and making food a meaningful part of a community.
Today, Samantha supports Eric’s vision of sharing great pizza and bringing people together. She focuses primarily on the behind-the-scenes work, but you’ll still find her popping up on the truck from time to time — helping serve and connect with the amazing community that supports Wheat + Water Crafted Doughz.
